Today I was going to make a “healthier” treat but husband won, again. He’s right though. We didn’t buy any Easter candy and it is a holiday tomorrow, so I’ll make the treat today and save it for holiday dessert tomorrow. Call it a compromise.

Easy, No-Bake Peanut Butter Pie

8 oz softened cream cheese (You can use low-fat)

1 1/2 cups confectioners sugar

1 cup peanut butter (We used natural)

1 cup milk (We used organic 1%)

16 oz frozen whipped topping, thawed (We used light)

(2) 9-in graham cracker crusts (Used one chocolate and one graham)

Beat cream cheese and sugar. Mix in peanut butter and milk until smooth. Do not panic because it looks so soupy. Keep mixing. It will incorporate nicely. Fold in whipped topping and then divide evenly between the two crusts and freeze. Get these out of the freezer ahead of time to allow to slightly thaw to be able to cut into slices.
