Here’s an easy recipe for the crockpot while you are trying to keep cool but enjoy comfort food meant for cooler weather. The picture shows what was left over after the main meal.

Serves 6 – 8

1 lb stew beef cubes

flour and seasoning to coat cubes

canola or olive oil to brown meat

6 large potatoes pared and cubed

6 carrots pared and thickly sliced

2 celery ribs thickly sliced

1 large onion, roughly chopped

2 c low sodium beef broth or stock

1 can condensed tomato soup

1 c red wine (optional)

Coat your beef cubes with flour, season to taste, and brown in oil.

Put beef cubes and other ingredients in the crockpot. You may need to add a little water. Cook on low setting for 8 hours.

We like to serve with garlic bread to dip in the juices.
